They made the model only to beat it up for the BoBW wreckage scene (I think: Springfield might had gotten lucky and not had its physical model damaged like the other since it was so far in the background) and never used the design on-screen again even when DS:9 switched to CGI which would had allowed all the Galaxy-likes to make a reappearance instead of endlessly reusing the Miranda model.
Out of all the Wolf 359 original designs, only the Nebula got green-lit for future appearances.

They're basically the TNG counterparts to the Star Fleet Technical Manual Constitution-likes.

IIRC converting ships into 3D was exceedingly clunky at the time: the CG Nebula model used in DS9 and Voyager isn't the original digitized, it's a digital reconfiguration of the Galaxy CG model which caused its proportions to change.
In theory, they could had done the same to represent the Freedom and Challenger, but the others used custom parts that would have to be modeled manually using jank early 90s software or used pieces off the Ambassador class which never got a CG model.

>intentionally has children and civilian spouses on board that take up space and make it harder to engage in combat

The Galaxy class was meant to be a long term city ship for missions that could take many years beyond the borders of the Federation. Designed to provide for all the needs of the crew including the ability to bring their families. The crew could pornteially be gone for 5 to 10 years far beyond the borders of the Federation.

In addition, it was also designed to potentially be a Colony ship to help create colonies on distant planets. The ship would be loaded with colonists and stuffed to brim with supplies and building materials. The Galaxy would drop them off on a far away planet and then come back. Potentially spending years doing it.

All the combat problems you mentioned were fixed during the Dominion war. The Galaxy received a refit for war and became a powerhouse.
