I don't work in the industry so these are just assumptions but one of the most important aspects of a fashion model is her tall height. Most actors are average height so you either have one actor look distractingly taller than everyone else or you have to employ tricks to make the costars look taller which is additional work. This limits the range of roles a model can have.

Runway fashion models are tall and very skinny because their job is to show off the clothing. Other than that, their physical appearance and sexuality is often deemphasized and sometimes their facial features are downright mannish.
