The temporary constructs of a feeble human intellect trying desperately to justify an existence that is without meaning or purpose. And all of them as artificial as the Matrix itself, although only a human mind could invent something as insipid as love. You must be able to see it, Mr. Anderson. You must know it by now. Realistically, if they were to convince everyone who is plugged into the Matrix that their life is a simulation and gave them a chance to experience the real world, about 90% will agree that it's better to stay plugged in.

The problem with choosing to be plugged in is then knowing that you're under direct and total surveillance permanently.
Technically you can ask them to wipe your mind, but there's no guarantee the machines would so so or if they even could. They can simply agree then mulch you without even thinking twice about it.

Also didn't the rebels have the tech to spend time in smaller matrix-like environments that were limited? Why not just use that and spend a couple of hours in there every day and eat nice pretend-food and so on...
