Just because that's how it works in one setting doesn't mean that's how it works in every setting. In SOMA, the technology did a scan and made a copy without really influencing the original. It could work any way the author wants, depending on the specific sci-fi babble they decide on.

There's no continuity of consciousness and no "coin toss" with how minduploading works with the hybrids in Alien: Earth.
