Sure, you CAN just do what the professionals do because you saw it on tiktok or youtube, but you likely don't know what you're doing because you don't do it as often as a chef.

Being a chef is about EXPERIENCE, by doing something many times quickly.
Your average joe cooking for themselves at home will get experience in cooking sure, but nowhere near the speed a chef would.
Also fuck culinary school, that's knowledge, not experience.

As a chef i've cooked well over 80k steaks of various size and cuts.
Some random joe cooking steak every day for himself to eat as his main meal would be getting the experience at a snails pace.
1 steak per day, when i'm cooking close to 250 a week.
