The show goes deeper than that. Everyone around them dies. Mortality is a prize only one of them can have. Like you said, they are compelled to do it. Funnily enough they cut heads lef and right, making their opponents dead. It's an act of mercy. The quickening is also a drugs, like you said.

The franchise isn't clear about it. Sometimes in the movies, made-for-tv movies, and tv series the prize is what you wrote. Other times the prize is the accumulated knowledge and power of all the previous immortals making the last immortal a god among men.

The first season finale of Highlander when Duncan had to face off against the ancient immortal named Grayson who was once the protege of another ancient immortal named Darius who had retired to become to the life of a monk after he had taken the head of an immortal holy man who was presumably the oldest immortal alive at the time dating back to stone age. Darius was a warlord on the verge of conquering Europe and the quickening changed him. Grayson was his lieutenant at the time and never forgave Darius for betraying their shared dream of conquering Europe. So Grayson wanted to kill Darius but couldn't because Darius rarely left holy ground and so to make him suffer Grayson turned his attention to people Darius was close to. Duncan kept interfering so the fought. Grayson was favored to win since he had accumulated more quickenings and lived thousands of years longer than Duncan. Duncan came to terms with his likely death but managed to achieve a miraculous victory in the final moment.

Freshly made immortals aren't worth killing. They need to age like fine wine to make the quickening worthwhile to older immortals. Also, how else better to deal with the loneliness of eternal life when all your family and loved ones die and you are unable to have children than to befriend fellow immortals knowing someday you might kill each other.

Immortals experience a first death like normal people before they become immortal. They then stay that same age for as long as they live. In the tv show there was one immortal who was a kid and no match for other immortals so the kid had to get them to put their guards down to kill them and chop their heads.

None of the immortals knew what the prize that they were fighting for was, just that it was insanely powerful.
The prize is nebulous, Connor wanted to be human and stop fighting. It's exactly what he got. His "telepathy" he wanted to use he openly admitted to wanting to use it to influence world leaders for peace.
Had Kurgan gotten the Prize, I'm sure his desires would have led to an entirely different Prize. There's no way he wanted peace and to be mortal.
Also, I believe that there are variations of the Gathering.
By that, I mean that there are many immortals, but not all of them are drawn to each Gathering.
Maybe only a few dozen are pulled. And, previous winners are exempt from being drawn to another Gathering. I believe Ramirez was a previous winner and that he was drawn to Connor to forge him into the weapon to destroy Kurgan because Ramirez knew how dangerous Kurgan was and Ramirez's deepest desire was to stop the Kurgan from winning a Prize.
I mean, five years from Connor becoming immortal to Ramirez showing up.
They also never explained how Kurgan knew Connor was an immortal before Connor died the first time either.
Except in the show, where Duncan knew about Richie and later about the silly girl who died in a car accident for the first time. Supposedly proto Immortals "feel" different.

I'm sure I posted it a bunch of times before, I'll post it again: this was the first time where I witnessed someone on the good side die in a tv-show. It was Duncan Macleod's wife. Iirc correctly they had kidnapped her and he couldn't prevent her death. It was quite shocking at the time. This was before HBO and where main characters died. The good guys weren't supposed to die. When she died it had a montage of Duncan reading a book from the library in his living boat while 'Dust In The Wind' from Kansas was playing. I wonder if it would look horribly shitty if I saw it now. Some things are best left to memory.

Actually, Duncan DID manage to rescue her, but she wound up getting killed by a mugger shortly afterwards. As dumb as the situation was, it did leave a lasting impact on the show.

I get why they went that route, not just for the sake of storytelling but also in-universe there are some skills Duncan must have picked up he would never use due to his morals (like the power of suggestion from the villain in the season 5 premiere), but it was also frustrating how using abilities from past opponents almost never came up. Given the nature of The Game and life in general, there's no way Immortals wouldn't try to stack skills like Megaman. Maybe they'll touch on that with the new movie, who knows.
