You have no evidence of that, there's no evidence that Thanos knew or cared how Earth's economic system worked or who the most powerful capitalists were, and he said that his method was "random, dispassionate, fair, the rich and poor alike" and there's no evidence that he lied about this. One of his core character traits is being honest.
More likely thing is that *some* of the people you listed were wiped out, but others remained and opportunistically grabbed more wealth and assets (like the homes of blipped people) thanks to the new situation

That's really only two things. Alternate universes and alternate dimensions are functionally the same thing.
And I don't know if they really shoved time travel hard enough that it killed anything. Making it so going back in time can't change things where you came from, rather it creates new branches of time, allows there to still be stakes even though time travel is an option.
You can't undo a problem with it quite so simply, and deaths still matter (you can sort of create copies of people who died, like with Gamora, but something is still lost, like her 9 years of life in between and all of her time as a Guardians team member)

You don't need to make up "We have our own special version of time travel that works differently than every other movie's/book's/comic book's/video game's time travel because we're special!" to have stakes, though. The stakes come from "Will the Avengers succeed in saving the universe? Or will Thanos succeed in stopping them?" Because also in a non-shitty version of Endgame, they don't kill Thanos two minutes into the movie and then introduce a version of Thanos that has nothing to do with anything at the last minute just so the heroes can have someone to punch at the end.

I was really hoping we'd get a moment in either Infinity War or Endgame, probably Endgame, where instead of just "You're crazy!" or some generic thing that obviously won't work, the Avengers actually lay it out in a way that gets across to Thanos that his plan actually won't work in a way he can't argue, and he gets so pissed he basically snaps and goes on the attack. You know, really let him get upset and drop the "logical villain doing this for the betterment of the universe" act and just let him go nuts. Maybe this could've been the start to the final fight in Endgame or something.

Thanos only snapped intelligent life, hence why we didn't see any trees turn to dust. He was trying to preserve resources that were getting used up, so snapping away half all biological matter would be even more retarded than his plan already was.
