I'm not defending him but they select already failing restaurants that are usually so far in debt they were planning on selling anyway. Hence, they use the show for the remodel and his name to recoup a bit more when they sell. A couple weeks or whatever of the film crews presence isn't going to fix the laziness most of these restaurants are suffering from. Sure for tv they act like they get their shit together but that's just an act. I would bet if you go back to some of the places even still open they'll have fallen back into some of their old habits like dirty kitchen, rotten stuff in the walk-in, getting drunk on the job, dust everywhere, etc...

Usually these restaurants were already loaded to the hilt with debt so even if they were to turn it around which in many cases they did, they weren't able to clear their debt quick enough. It's really formulaic. Almost all of them act like they've seen the light and have came around in the last 15 minutes of the show after crying about how amazing the remodel is and sampling the new menu. Most people can't handle a successful restaurant because it is like that relaunch service at the end of the show most days. LOL last night the restaurant I work at got absolutely slammed and nearly the entire staff was in the shittiest mood. You can't win. The kitchen just wants to cook here and there while smoking weed and listening to music and the wait staff just wants to wait a slow and steady stream of tables but to get huge tips.
