Why did Hollywood embrace Timothee Chalamet but not Shia? Both had box office success young, both were dating hot girls of their time, and both hang out with their favorite rappers...but for some reason Shia didn't become a beloved pop cultural figure.

Shia has always been a great actor. His problem is that his alcohol and drug use and emotional/mental issues due to his shitty childhood regularly get in the way and sabotage his success. Timothy Chalamet isn't bad and I like him in Dune, but I would argue he doesn't have half the intensity of Shia to bring to any given role.
