Probably the musical Camelot made them silly for a while (as well as Holy Grail) and then costume dramas fell out of public favour. You have to remember the violence and budgetary aspect of Cowboys and Samurai films. Most medieval films cost way too much and are therefore santised. A really violent Knight movie could start a new fad tho if done right. You will probably see a tv show soon with some of the courtly drama appealing to housewifes and battles to draw in men.
