Mary Sue characters are only a problem when the plot of the movie doesn’t revolve around them being able to solve the problems. I’m explaining this poorly, but to use a movie like Ip Man or John Wick as an example, every scene they enter is written with the expectation that they will blow through the problem. It isn’t presented as some unbeatable task that they just do. Compare this to a character like Rey in Star Wars, we’ve seen how much training is required to be skilled in the force, its taken other characters blood sweat and tears to become powerful. The challenges she faces are often presented as being exceedingly difficult tasks, especially in the context of the other movies, yet she clears every challenge first try. It lacks both the nuance to be a chosen one story, and the balls to just go huge with it.

Because Ip man is written around the character being able to solve those kinds of problems, the expectation is that he’s going to be better than almost everyone in universe. To use John Wick as another example since I already did, when 20 goons show up the movie doesn’t expect you to believe he’s being truly challenged, it wants you to revel in the choreography of how he is going to absolutely murder those dudes. I wouldn’t expect another assassin to win in the same odds, because their name isn’t in the fucking title of the movie.

I think it's more that Ip Man challenge are actually much bigger than what he can do physically by punching someone.
Ip Man could be the greatest martial artist in the world but he can't punch the entire japanese army by himself. He starts as a rich lord hermit who lives in his ivory tower above everyone, respected by the entire community and is reduced to someone who has to have his means taken care of him because he has no idea how to do menial work. When he snaps and brutally beats the 10 karate men he feels powerless because that's nothing and his friend still is dead thanks to the japanese. He wonders what he can actually do and finally starts teaching kung fu to people so they rise their morale and whatnot
He could punch faster than everyone but when his wife gets cancer there's no Wing Chun that can save his wife.

power level has nothing with being mary sue. you can have god killer-level character be not a mary sure and weak ass character be a marry sue. defining chracteristic of marry sue is to bend entire plot rules around it, the more blatant it is the more mary sure character is.
