The concept of using a scythe as a weapon comes from Christianity.

You don't 1v1 muh honorable warrior's duel the fucking wheat. You harvest it. It is beneath you. It exists to be culled for your sustenance or any other purpose you see fit, because it has no agency. When a character uses a regular scythe rather than one with the blade turned 90 degrees to be a more conventional polearm this is what is being conveyed: a sheer disparity in power or ability and purpose. Obviously it doesn't always work and sometimes is deliberately subverted, but that's the heart of it.
Alternatively it is played completely straight with no symbolism: using a farm tool as an improvised weapon because the means, skill, and/or time to adapt it to a "proper weapon" are not available. Stick gives reach, sharp edge and point gives cut and stab. Done. It's crap, but crap is better than regretting all your life choices while bleeding out face down in a cow pat because someone else had long pointy things while all you fielded were your fists and harsh language.

Farming scythes are curved, its the curve that makes it effective at cutting, not just that its a sharp metal blade. You won't gain anything with a back swing even if it was sharp. In fact you'd weaken the strength of the entire blade trying to do so.
Also probably the main reason is cost, its much cheaper to make a single edged piece of metal and those fuckers were used by farmers and field workers who historically were extremely poor or even serfs or slaves.
