If you were really into the time mechanic from PoP, then Tears has a similar concept of "cheating" the game, and Majoras mask has that mechanic on a macro level (though its forced on you at one hour intervals, so its both boon and bane), both really solid.
Some people will insist on oot because its their religion, but that game is about 25% fetchquests and other padding, unskipable cutscenes that repeat information, and constant handholding, I think these days its a bad introduction. Twilight princess and the much maligned skyward sword are good if you dont mind longer intros, and for immediate engagement there's LoZ, AoL,ALttP, and ALBW in topdown, or botw/totk in 3d.
F-Zero GX on gamecube is perfection, but Fzero X on the 64 is also incredible, and even the original games hold up, but my personal favorite is Fzero99 on NSO, its not half as fast as X or GX, but its quite competitive.
