Those greek, norse and Roman games are made by american and european teams, often those who are not native to said cultures. Japanese also often touch other settings and cultures besides the endless flood of feudal japan media. That is anon's point.
there is no issue with chinese making chinese media, the "problem" if you will, is the lack of other influences. 99% of chinese stuff is either Wuxia, chinese folklore or futuristic military. Similar to japanese media being about japanese feudal stuff, what raises an eyebrow is the lack of anything else, a showcase that, if necessary, they can look, try to udnerstand and reshape through their own lenses the rest of the world.
It is no surprise that the best media is, often, that which does not rely entirely on one's culture alone, but instead tries to see it through others. Most of the best manganime are those with heavy western influences, to the point there's a meme that "westaboo women make the best mangas" (Full metal Alchemist, Dorohedoro, Dungeon Meshi, etc). Western vidya also got better, specially in the indie scene, once people who grew up with the ifnluence of japanese games after fifth generation and onwards.
It is clear that china is capable of making really cool shit, but without trying to see the whole world, they're bound to repeat the msitakes western media did during the "brown and bloom" military shooter era, where games felt icnestuous and generic, which is already what a lot of chinese games feel due this.
