I've never played a final fantasy, should I started with VII remake?

Yeah, it's a great game. Start with Rebirth, the open world has a lot of content, then play Remake. 13, 15 and 16 are also great modern takes on the franchise. After that, play 1-3 and 8. Don't bother with the rest. If you like, the FF movie and Advent Children is also fun.

If you want to get the wrong idea about FF? Sure. If you had ever played an "action RPG" where parry QTE is better defensive mechanic than all other stats in the game then you already played Rebirth.

I'm a huge FF fan and I think you can kind of start wherever you want, the thing is I liked Remake less as a fan of FF7 so you might actually like it more coming at it as someone that has no idea what's going on.

I think the creators of each Final Fantasy game go into development expecting it to be someone's first Final Fantasy game so I think that's worth respecting even though I personally wouldn't start with Remake.

Spinoffs: Tactics, and GBA Tactics.

I recommend starting with 10, if you like it play 7, 8 or 9. Then anything is fine, though expect anything that came after 12 to suck balls.

4, 6, 7 (original), 9, and 10 are all great places to start
1 and 3 are good places to start as well but will have less of what a modern audience is looking for in a JRPG

2 is one of the hardest RPGs ever made, do not start there
5 is an excellent game on its own but storywise is a step down from 4 and its presentation can't hold a candle to 6
11 and 14 are MMOs
13 is a rough gem at best
15 is compromised
beyond 15 it's increasingly not Final Fantasy

so in conclusion, play Final Fantasy Mystic Quest for SNES. It's designed for the entry level RPG player, has charming if simple characters, some unique gameplay elements, and a fucking awesome soundtrack comprised of ballads, marches, and speed metal
