Here is the most important mod for this set up for anyone that wants it, it adds dashing and parrying (random chance). Then the mod "Shields up" adds active blocking and that's basically all you need for Morrowind Souls.

I'm gonna have to do a bunch of custom shit when I get around to Skyrim. Need a femboy squire companion with a scripted dialogue option to equip my suit of armor and who can be dicked down at camp because he's naive enough to think that's normal. I've went into level 1 dungeons in the extreme north west and the islands off the northern coastline. At the start of the game in a mine near Whiterun I had level 30 guys. It was the level 1 dungeons that made me just quit. No point building a character if I can just sprint through dungeons without any care or planning required.
If I ever mod Skyrim again it's going to have scaling.

After a certain time of trying to turn Skyrim (specifically) into a souls-like, it ends up stop being an rpg and ends up being more like a hack n' slash/rollslop. In other words, taking the combat outcome further away from the numbers and even more towards player's dynamic actions.
It kind of changes genres. Skyrim does its combat a certain way (many would say it could do better - as proven by mods) and Souls games another.

For your very first playthrough? Probably minimally. I'd recommend OpenMW for a first one just as it's probably the better way to run it, though you don't get access to the MWSE (script extender) mods that's okay since most of those are more crazy.

OpenMW is fine for first playthrough. I like to have thick volumetric fog and pump up the draw distance a bit so it retains the original look without obvious pop-in.
Beware that if you crank draw distance to max you can make even a relatively powerful PC sweat. My 13700k + 3060TI can't hold 60fps with max draw distance.

Anyway you should be fine with just OpenMW.

Google "mod organizer 2 - From zero to "Hey Sexlab is working!"" - it teaches you basics of mod manager and provides a guide to installing sexlab with dependencies.
I had to use sexlab, since ostim and the other one don't support VR yet, but you might be better with using ostim.
Just make sure you read all the description of the mod - authors usually do the research for you. Run the game after every mod, to spot any conflicts, someone has already probably written a solution in the comments.

What's a good overhaul mod? I have always been a Requiem guy but the later versions have nerfed the difficulty considerably, it still has dangerous things but now only higher level creatures prove to be a real danger and the mod prevents you from using the difficulty slider to make it easier or harder.

A lot of it is mostly small mods like follower, homes and patches. I personally use the following xEdit script to flag some mods as an esl. Just be wary of mods that have custom scripts, if they point to a particular FormID that gets changed during the compression, you'll have to manually alter them to match the new ID and compile them (assuming the modder bothered to provide the source files).

That's because Chiv 2/Mordhau/M&B combat is really only interesting (read: autistic) in MP. Otherwise it's the classic M&B DUNK, DUNK, RAAAAAA, DUNK, DUNK, OOF. Skyrim technically already has directional attacks but I doubt it's interesting enough to bother with.

Bethesda does not know how to do combat. Their combat has always been at or below Minecraft-tier combat. Bethesda combat, much like the rest of the gameplay, is extremely shallow and simplistic. And Bethesda has dumbed down magic in their games so severely that it is weak and ineffectual in Skyrim, ie - useless. We know that Bethesda designs their games exclusively for the skill level of people moving up from Splatoon and Mario Kart, and not even mods can improve upon the combat.

The AI would be tricky, I think. I mean, skyrim already has different range for different attacks, thrusts have a smaller hurtbox so need to be more accurate so the fundamentals are there, but then depending how intricate you went with the parrying now you have to re-design the AI entirely around the new system, as you can see with every anime combat mod the AI still just kinda saunter around side to side, try to maintain a rough distance from their opponent, and sometimes attack. I think the most impressive skyrim AI thing I've seen so far is that if you're attacking from somewhere they can't traverse to they'll go and hide behind something that breaks line of sight.

It may not even be possible to make the AI work with a chiv combat system, I dunno I'm not a programmer.

I think Smoothcam and TDM make a huge improvement no matter what combat mods you install. I've been playing with the souls-style combat with MCO ADXP but yeah it's still janky no matter how many others mods you add on top to try to fix it. Maybe the vanilla combat + Precision to fix the atrocious hotbox is a good compromise. And if you want some flare you can change the animations. But yeah turning it into souls doesn't work
