Technically almost all the FE games can be solo'd with a single character if you know how to break it.
I'm no expert but off the top of my head PoR might be the easiest to do so since it's an easy game in general and you can baby them with bonus EXP. Getting the full trio of shota characters would take a while though, so you'd have to deal with Rolf for early game.

Are you sure about that? Base Bartre only has 94 hit with a steel bow,. The wyvern lords in Arcadia can have up to 41 avoid. Might want to use an iron instead. You're also overrating bow access, because they aren't enemy phase friendly. Being able to shoot down one or two per turn isn't as valuable as enemy phase sweeping. On the chapters where wyvern spam is an issue, there are lots of mountain tiles and it makes the most sense to have a berserker enemy phase them, since the crits can get the job done if the raw attacks don't.
