It makes a world of difference to hatch eggs. Just settling for the pals you find usually means you'll probably just have a couple nice traits. But if you selectively breed the best traits, your pals will do probably over twice the damage. Then there's condensing, which is also really important for power, leveling up the pal's special ability, and hitting level 5 for work suitability (and FYI, every suitability level higher is basically triple the one before it)

The update feels more for mid-game and early game than anything for endgame, which is fine. Older players will probably play for a bit before moving on, but I think newer players will definitely enjoy the ride a lot more. Even the dungeons, which felt procedurally generally and mishmashed and clashed with each floor, got revamped to fit more with the island they reside in, which would have been really nice to have back in day 1 so that they didn't feel same-y.
The devs are pushing this update pretty hard, even though the terraria aspect is kinda small in retrospect, but it seems more as an excuse to attract new players to trying the game out, and from who I talked with, those new players have very different experiences from my time playing it day 1. Now if only they can fix console from crashing constantly and ruining save files...

It's a headshot system, as far as I'm aware.
Some pals have funny designations for what exactly is a "head", but, you can tell if it's a headphone 'cuz there's a different damage sound.
There's also the unaware damage boost you get for hitting a pal that doesn't see you/is asleep/is passive and doesn'tcare about you, which is a much bigger modifier.
I wouldn't be shocked if there was an independent crit-like effect somewhere in the game I just haven't noticed, maybe baked into a passive or unique attack, but as far as I know, random crits aren't a feature of the game.

There are now pals that could potentially have great swim speeds than flying speeds between islands. Speed spacks for pals on water are bigger than the general speed state (king of the sea is +50% on water as opposed to Swift's 30%). There is some exclusive material from salvage that will be needed for crafting 60+ content, and requires fishing on top of a water mount.
There's a water legend pal that, when maxed out and swimming passives, is about as fast as Jetragon in the water and jumps pretty far.

But you'll still probably want the ease of just flying everywhere since swimming is still kinda gimmicky. It's no longer the worst option though, and a lot of mountable water pals got a speed increase in the water.

You said before 60 and Starryon is a normal level 50ish Pal which isn't that far off Shadowbeak, so you can easily catch it at like 30 if you want. it also isn't one of the heavily limited breeding pals like Bellanoir or Blazamut so you possibly even have the parents already to get a Starryon egg right now.

Yes. I have a Celaray at my base with lv 5 watering. Keep in mind that condensing a pal completely adds a level to each of their existing skills so you shouldn't level a skill to 5 before then.
