The reality is you were able to enjoy games as a kid because you had no financial burden, stress, and responsibilities. Also most likely your pleasure receptors weren't fried.
Figure out money (a good 1 or 2 years worth of your living expense in your bank account), Shelter (ideally a house with low mortgage but nice apartment is fine too), health (don't be fat, workout at least 3-4 times a week, eat only meat veggies and fruits, no alcohol, cigarette, coffee, sugar, drugs, or at least try to keep them as once a week treats), and no stress.
Once you've done all that, I recommend booking a vacation to a cabin or beach for a week with nothing but creative things like woodworking, drawing tool, instruments, etc.
No books, no games, no phone or tablet, the most bland food you can. Shit will reset your brain to feel pleasure from hearing wind in the leaves.
Watch as you magically start to enjoy things again because you've basically recreated the lifestyle of a child.

I can honestly enjoy vidya to this day, as long as there aren't any things to do. If there are, I'm just stressing that the chores or whatever are being put off - do the thing, play games.
Also you need people for your mental health - if you haven't spoken to anybody or haven't had the most basic company in ages, that will impact you, and your enjoyment of vidya.

Have been expanding my tastes lately and I'm currently enjoying 3D platformers, rogue like games and Metroidvanias, I just recently completed Guacamelee 2 Complete, Super Lucky Tale and Turok.
I'm currently playing some PS+ games Team Sonic Racing and Sandland.
Also have a massive backlog of games, I really need to stop buying games LMAO.
Thinking on playing Thymesia or Another Crab's Treasure when I'm done with the current games
