The Crash remakes are better than Spyro's (better than Spyro 2 and 3 at least), even with the pillbox. Diablo II has a better remake than both, even without the ability to use mods. MediEvil has the best remake of all though.

FFXII upwards are all products of Enix shitting up old square and I can never take anyone serious who tries to assert they're actual FF products. I was disappointed when they "figured out" the characters more later down the line. The thing about flash is that it makes it incredibly easy to setup a scene, manage objects and the code tends to be simple enough (basically just javascript, since actionscript derives from acmescript). There were a shit ton of tutorials, so people tended to grab some code, slap it in, and make some generic platformers or shmups ad nauseum.

If anything, I'd say that flash made it easy to prototype some ideas, especially if animation is involved, but I wouldn't use it today.

You're mixing up technologies. Java was used in dumbphones, flash died because Adobe pulled support, and they did so because it wasn't making enough money.

To give additional context, historically Flash had issues on macOS and was generally performance heavy, so Apple opted to just outright deny Adobe from implementing it on their mobile devices. This was basically Apple strongarming Adobe into bettering themselves, or the industry at large is going to adopt HTML5. You can guess which one happened.
