The real money comes from having a super aggressive bet spread where you're betting table minimum when the count is low (or just leaving the table entirely) and betting WAY more than the table minimum when the count is high, so that's primarily what casinos look for. If you're clearly counting cards but you're just flat betting, they're not gonna bother you. It's less about the counting strategy itself and more about you combining that with super optimized betting and turning the game into a job that they have a problem with.
A lot of the mass appeal of blackjack comes from the idea that the game CAN be beaten even if people don't actually know how. Changing the rules to make the game uncountable turns away gamblers too so instead they offer the beatable game but then ask you to leave if they think you're too good and your bet spread is too aggressive. It's an odd cat and mouse game

You have to be taking the counting and bet spreading to a pretty extreme level to get backed off, it's like top 0.01% of the skill scale.
