Way easier. The Sans fight is purposefully made to be unfair bullshit and a marathon with multiple phases on top of that. The Knight was a challenging fight, definitely the hardest one in Deltarune so far, but I won within the span of 10 tries max (I wasn't counting). Maybe it's way harder without the mantle. I wouldn't know.

Easier overall. Fighting the knight is way, way shorter and has less gimmicks, like Sans' DOT on attacks and his attacks in the menu. That, and you have other party members to spread damage around a bit for the Knight.

If the fight was maybe twice as long as it currently is with some added gimmicks, maybe there would be an argument. I wouldn't be surprised if we get some equivalent in Chapter 7.

Also, it helps that she matches Kris to such a perfect degree that it makes every scene with them endear the player even more. Both of them are social outcasts, both come from a (seemingly) rough home environment, both have lived their life without really any achievements/success that helps them identify themselves, both loves pranks, and both seem to immediately know how and when to be complete idiots without communication (see the platter scene outside Noelle's house).

She's a fun trope that's actually made good through the fact that she's genuine and cares about Kris a lot. It's rare you see characters just be good friends in a game. And while I ship the fuck out of Kris and Susie, I'm genuinely fine with them just being buds that share the same, single brain cell.

Homestuck had some hard rules on time travel, doing anything that broke this rules lead to what they called a "Doomed Timeline" that was unwinnable and permafucked, when a timetraveler realises they were on a doomed timeline, they ofted ended up time traveling back to the "Alpha Timeline" to pretty much be cannon fodder and help the Alpha Timeline to succeed. I think that both Breath and Heart fit well due to their role as the emotional backbone of the team through Acting.
Some time ago I read some Sburb headcanon (the best homestuck headcanons) that interpreted Doom as the aspect that gave a degree of Control over Sburb itself, so I think that's a neater fit for Us (and Gaster if the cunt it's actually real, specifically a Lord of Doom)

4 Kids play a weird computer game that allows them to interact with the physical world to create physical objects in a sims like UI, transitioning to an action RPG after their homes are teleported to an alternate dimension which is an RPG solar system (also the earth is destroyed by asteroids, a phenomena linked to the game). The point of the game is slowly revealed to defeat two main bosses and fabricate the start of a new universe, which they could potentially live as immortals in. 3 or the 4 reset earth kids are boring retards, and all of the existing characters become much less intelligent, funny, and consistent, because the story is now being ghost written by tumblr trannies. Nothing happens for thousands of pages, the original kids and trolls meet up with the new kids, and then they almost all die in a stupid series of events, leading to an in-universe retcon of over half the story so that the bad end could be averted by the worst character in the story being brought back from the dead for no reason. Then the final boss mega evil entity is beaten off screen in a completely unspecified way.

This non-ending is presumably elaborated on in a series of fan-written epilogues and sequel series in which literally every character is retconned to be trans or gay, but I don't know the details as nobody has ever read any of it besides the contributors.

The epilogues are unironically bad, there's some interesting ideas, but they're bad as pieces of writing, as pieces of fiction, as commentary on fanfiction and as epilogues of Homestuck.
Homestuck^2 is mostly mediocre because when it started it was made by the same crew that made the epilogues, so it had the same problems but now also the art slowly got worse and worse till you reached a point where the couple of genuinely cool character designs (Robo Dave, Robo Dirk, Aradia, the new kids Maybe CalliJade) didn't justify it, so it went silent for what pretty much was the entire pandemic + a couple years. Now it's back and from what I've heard the new crew has been doing a decent job, but they also decided to stick with the dead weight that was the setup from the old crew. The chapter 4 suselle scene was probably much longer but Toby Fox at some point (wisely) realized that the vast majority of players wouldn't really care much to sit down and watch an extensive shipping bait scene. Even in the final version you can pretty much skip all of their interactions if you make noise quickly. Toby is VERY considerate about pacing, and I think he understands that a lot of people playing the game don't really care much for the Susie and Noelle stuff.
