You need more Stamina. Career mode gives you an invisible +400 buff, but that goes away for URA races, which show you how your horse ACTUALLY performs (and how they will in Team Trials/etc). That's why I focus on Speed early to win every G1, then push Stamina hard towards the end.

If you're trying to build PvP horses before you have the legacies and support cards to consistently get A horses, you're probably getting a little bit too ambitious.
