Nah. The secrets and little hidden details are there for those that stumble upon them or are replaying the game so they have a new experience. It adds value to each player's playthrough where one person may go back with Susie to eat the moss in Chapter 2, another will miss Spamton but see the alternative secret scene with Tenna, and another will only find an egg in Chapter 4, leading them to maybe want to replay to find the rest.
I'm always of the mind that missing things in games adds to the experience, so long as it's not something that actually takes away from your understanding of the narrative/ability to do larger parts of the content. I fully believe that Deltarune can be enjoyed (at least up to the current chapters available) without finding every secret. I've seen people miss super bosses, key dialogue (I missed Carol's dialogue since I fucked around and turned on the santa things), and other bits but still have a blast. There hasn't been a secret thus far that I feel, if missed, would lessen my experience with the game/story.
As for the backseating and obsession with diehard fans pushing people to see everything, I never blame a creator for the fanbase. That's always going to be ass and you will always have those people for every game. I wish that part of the fanbase would shut the fuck up sometimes, but what can you do.
