Because it's been retconned in Bananza. Cranky Kong fought Jumpman, the man in overalls. Donkey Kong and Mario now fight each other in Donkey Kong arcade, which now takes place sometime after Odyssey. The arcade trilogy is followed by the Mario vs Donkey Kong series and the Mario spinoffs featuring DK.

This is why Donkey Kong has never appeared in a mainline Mario game. They haven't actually met yet. Donkey Kong meets Pauline in Bananza, Mario meets Pauline in Odyssey years later, and Mario meets Donkey Kong, through Pauline, soon after during Donkey Kong arcade.

Now we know that he did NOT fight Mario, but some nameless man in overalls. This man is NOT Mario for two reasons. First, Mario is too young during the events of Bananza to have gone on any adventures. Second, if he was old enough, he would have been famous enough for Cranky to reference Mario by name.

The timeline goes as follows:
