I only ever play the same character in most RPGs, a muscular brute force melee guy, because that is the most fun for me.
I tried playing other characters quite a few times, but it's just not as fun. It feels like less that I am truly in the game myself and more like controlling a character in the game or I am an actor in a stage play which I do not enjoy a lot.
I sometimes play another character for variety, but it never feels as great and like an amazing adventure as when playig my comfort guy.

Plate armor does require some fitness and training to move agile and nible in. If you put some rando jackass into plate, he will probably fight worse with it than without it.
But if you are strong and fit and practiced with it, it shouldn't really hamper combat mobility in a meaningful way.
