Elden Ring's open world is filtering me mang. I tried following the Grace beams but it sent me straight to Maggy or whatever and showed me that I'm underlevelled. Do I just run around randomly and kill everything until I die?

Walk around and explore the map while trying to remember which locations you've visited and which you have not, if you see something that you want to check out on the map mark it so you see where it is while playing.
There is no reason to rush Margot at the start.
You have a lot of things to explore before doing Stormveil Castle. However, I suggest beating Margot once you have a +3 weapon so you can access a smith who can upgrade your weapons further.
I recommend focussing on dodging in his second phase until he starts using his weaker moves again.

elden ring filtered me because i didn't see the big arrow on the map and decided to go to the right into the red land instead of left to the forest which made me overpowered when i did get back on track and ruined the whole experience for me

This has been my elden lean experience.
For this reason the bosses in the other games always felt way more fun for me. In elden ring you actually have to make so much effort to be the right level or whatever to make the fight not too easy or too hard to be enjoyable.
Feels like a chore.
The benefits of the open world are really overshadowed by all the shittiness it brings. Not worth it.

Exactly this. The “freedom” in the right kind of design is mostly smoke and mirrors. You slap down some generic cliffs, throw in a couple ruins, add a checklist of copy-pasted objectives and suddenly you’ve crafted a “massive open-world sandbox.” Meanwhile, actually designing a tightly paced experience like the left one takes effort, direction, and intent-things most devs can’t afford or don’t want to risk anymore. It's not even about artistry anymore, it’s about maximizing engagement metrics and keeping whales chasing the next dopamine breadcrumb.

yes but that's still what some people want. even if it's an illusion. there's merit in just having the freedom to walk around in a realized land mass. immersion factor is just important to some people at the expense of everything else.

i had the same issue with enemy difficulty inconsistency
i accepted the irrationality of it and overleveled my character to make the remainder of the game as easy as possible
i'd rather have a predictably easy game because i overleveled my character, over having an inconsistent experience because i tried to play "honorably" and immerse myself in the experience
