basic QM
the quantum state contains all the information about a particle
the quantum state of a particle can be described relative to different coordinate systems
turns out that different types of measurements (e.g. position, momentum) correspond to different coordinate systems
moreover, when you make a particular type measurement, the quantum state suddenly ends up becoming aligned with one of the related coordinate system's axes in a probabilistic way determined by how much the state was aligned along the different axes of the related coordinate system
if you measure the same particle again immediately afterwards, it is always in the state you just previously measured

for the double slit experiment, the difference is where the position measurement is made. if you make it at the slits, then the state collapses to the position of one of the slits, and then the particle continues on its way
if you measure at the screen, the general quantum state is a mix between the slits, and you get the double slit interference pattern (kind of like a water wave impinging on two holes in a wave break)

the act of measurement, truth be told, is the mysterious part
otherwise the math is actually pretty straight forward

The actual answer in layman's terms is that looking at something so minutely is really fucking hard to do, and that "looking" is an involved process that actually interacts with the subject. Therefore, the outcome is changed weather you look or don't.

Think of it like needing to shine a flashlight in order to see. But that flashlight affects the environment enough to make a change. At ordinary scales this doesn't really change anything, but on the quantum level, it makes a hell of a difference.

It's actually incredibly simple, "observe" doesn't mean look with your eyes, it means shoot a photon at the electron to measure its position and thereby identify which slit it goes through. There is still magic though: Why is a wave function the representation of an electron's position anyway? Why does the uncertainty principle exist? Why can an object have wave and particle properties? These are questions physics hasn't been able to answer. The best you're going to get is something like "well why can't it be that way?"
