I started playing the tales of vesperia remaster on switch (I haven't played a tales game in decades) and it feels terrible. Super stiff and slow combat. Guarding feels useless as the lag between starting and ending your guard is decades and they just hit you after your guard anyways.

I imagine symphonia was like this as well when I played it as a kid, but has the series really not evolved?

The original release for the GC runs at 60 FPS natively but has less content, the PS2 version and the remasters which are all based on it run at 30 FPS but have extra content.

Sure, but do go with the remaster. Every version post-Gamecube has new content that wasn't available back then. New Mystic Artes for every character, bosses have new moves, a new optional dungeon, new events, a casino, new cutscenes, scenes that were unvoiced are now voiced, new costumes, etc.
The one thing you lose out on are 60FPS, but you should know both the pros and cons because you will be missing out on a whole bunch of content if you trust /v/'s OLD GOOD NEW BAD (even if Symphonia's ports *are* subpar, but still add shitloads of things that make the GC releas feel like a beta akin to 360 Vesperia)

Story progress is gated by paying off a certain amount of currency. Any normal JRPG player will never have a problem with it because they'll fight the local boss first, which always gives enough reward money. The characters all suck, Alphen and Shionne are the only well written ones and the story and its themes are exactly as deep as FF16.
The skits are horrible and the 2nd half of the game just sort of gives up.

Visually it's the most beautiful anime game. The sfx is excellent. Combat music is catchy. The exploration is ok but I'd prefer an overworld than long useless tunnels.

The combat is the biggest blemish. All else can be forgiven if it had typical tales combat, but it doesn't. The main gimmick is a QTE that wins the fight for you if you chain 3 artes together in regular fights and bosses encourage spamming 1 attack and rolling. Some mystic artes like the ice swordsman expect you to chain rolls for fucks sake.

Xillia has some of the ugliest fields and caves of the genre. It's kinda hilarious how an HD game manages to look worse than every previous mainline Tales released.
It's not Arceus Legends or SwSh level, but it's pretty close.

Never played Xillia. Is the story more tolerable than Arise? Could not fucking stand that game's cast and story.

Xillia is an unfinished game in Elympios and 2 uses cut content of the first (Gaius, Muzet) because the first is a rushed anniversary game.
Hideo Baba/the producer himself confirmed the development team rushed the game to attend the anniversary release.
It also has much less content in comparison to the previous 3-D games, like few costumes, no cameo battle, no minigames. It's not that it's confirmed, people hope for the best instead of the worst, Xillia 2 was a damage control/expansion pack of the original disguised as sequel.
