High poise damage is huge for a spell, Rock Toss is amazing in Dark Souls 3 for pyromancers for that exact reason, you can topple Cathedral Knights with it even if you're not spell-swording with a Crystal infusion the way the game really wants you to because pure mage builds suck in DS3.

Glintstone Pebble is far and away your most reliable spell, sucks but it's true, you'll only want to upgrade to Comet and Shard Spiral much much later when you can actually get to them, Shard Spiral in particular fucks huge bosses like Bayle HARD
You've already cottoned onto Loretta's Greatbow for sniping
Glintblade sorceries (you start with one if you chose Prisoner, the "Carian" class) also ignore enemy input reading because enemies do a boot scootin' boogie away from the actual action of your casting, not away from its delayed projectile
Sorceries are always pure damage casts in every Souls game, Miracles (Incantations here in Elden Ring) are always mainly support spells, Pyromancy got folded into Incantations this game so all your damage spells are going to be either Fire, Holy, or Lightning (available later) element with no variation
Sorceries are pure damage and have little utility in comparison, can dabble into other elements beyond Magic with a very small number of spells, and also have excellent "flat" buff spells with the shield and sword spells
If you're wanting spells that work like weapons just stick to Carian spells and that one Battlemage hammer spell
And for God's sake find the Carian INT weapons or infuse a normal weapon with Magic or Cold
