Think about it like this, the top selling Anime cater to the Japanese audience, they aren't made for western audiences but they often appeal to them because western audiences want that. Steins;Gate is an excellent starting point and it will definitely treat you well, very well written, to this day some of the best rising tension and straight up shock n'awe moments I've seen in a VN. Can't go wrong with it.
But! There's also Chaos;Head (Noah). It's the first SciAdv game and while it's less refined and leaves things up to the imagination of the viewer until it blindsides you, it keeps you on a knife edge from chapter 2 to the end (also it's a snapshot of 00s japanese otaku and internet culture, more than Gates, which wins it points).
In the end it's a different of themes and tone. Do you prefer a science fiction thriller with perfect rising tension and some of the best executed twists in VNs or a horror story that has an extremely oppressive tone and doesn't let up?
