Lucas really said "history doesnβt repeat, but it rhymes" and then dropped prophetic space politics wrapped in laser swords and space wizards. Dude straight up looked at the post-9/11 world and went "yeah, this won't get better" and made the prequels. Dooku knew about the Empire, the CIS were always a bunch of tools to help tranform the Republic, they were never meant to win. Furthermore, Dooku purposefully gave the CIS all the things he hated so that they'd be discriminated against during the Empire (Alien leaders, independent companies, droids. Dooku was a humanocentrist who believed in the government controlling every single facet of life and aliens being second-rate citizens)
Of course he's still betrayed by Palpatine because he's less strong than Anakin/Vader, who is the strongest Force user alongside his son to ever live, but he was still more of an ally and apprentice to Palpatine than Maul was at the end of the day.

It's weird how the dark force just scrubs personality most of the time because outside of very vague moments you really don't see a lot of their overarching personalities.

I don't buy for a sec that Lucas intended them to be perfectly good in the PT. I think that's an opinion he made up after TCW where they're portrayed as one-sided heroes who are occasionally blinded by the dark, rather than the PT Jedi who are clearly arrogant and paranoid, and have larger faults that Luke fixes later on

Sheev from birth was a total psycho pretty much as seen in the Plagueis novel. He was also an adrenaline junkie who loved collecting vehicles which is likely still true, I can see him maybe doing personal races with his custom Theta-Class shuttle and other collector ships secretly. He's also always liked the opera and high-class theater as seen in RotS
Dooku was always (at least in Legends) a bit of a psycho too who saw people as either allies or threats, no inbetween. He always had a superiority complex due to being the count of Serenno and didn't believe in ruining his reputation for friendships or whatever (this is a pretty big part of his backstory)
