People have already said, yeah there was a giant fuck-off shield on hoth. In battefront 2, you even plant a beacon to destroy the remaining escape transports with orbital bombardment to end the mission.
For geonosis, there were a metric fuck ton of jedi on the ground that would have been killed, plus I'm pretty sure the only ships in the republic fleet at that point were those mini-star destroyers which were just transports and not full on warships.
Also maybe they wanted to capture the CIS leaders, instead of starting a full war (Which they clearly failed).
