okay so
green bottle parm is pre-grated parmesan style cheese (as in not DOP protected but still created in that style) with anti-caking agents such as cellulose.
this type of cheese is not exclusive to the US, you can find it throughout europe actually. its not americans eating 'fake' cheese, in fact DOP parmigiano reggiano is available pretty much everywhere outside of rural areas or food deserts... and within the united states there is a strong cheesemaking culture such as that parmesan cheeses that do not bear DOP marking by virtue of not being made in designated regions have won world cheese contests... the second runner up in the world cheese awards 2024 was an american cheese, hard with salty crystals, a sweet and striated throughout the interior.
the articles cited in the video specifically reference a manufacturer, castle cheese, who were in violation of adulteration laws with regards to the improper labeling of what they were selling, not the general use of cellulose. the FDA report stated that the cheese being sold as parmesan was a cheaper mix of other, non-parmesan cheeses and above acceptable percentages of anti-caking agent.
