Sword and Shield is hyper linear with the exception of one large area. SV is very much open progression only really limited by no level scaling, so they're quite different overall.
That said as a more traditional linear Pokemon experience SwSh is not the best in that format. The story is oddly paced, with events you'd think would be notable happening entirely off screen, and basically all of your involvement in anything besides the gyms being very late on. Dynamax is a cool concept that adds some dynamism to battles (attacks gain the ability to apply extra buffs/debuffs and weather/terrain making battles involving them a bit more volatile).
I would say SV is better purely for being more experimental, but it runs worse and looks worse. Switch 2 version fixes the running worse though, as it's a mostly clean 60fps there. But I do think the ultra-openness makes it a more fresh take on the series.

Shiny hunting is very comfy in SV but I'm definitely on the side of people who think the ease of getting shininess is devaluing them now. They're still cool, but they're far less novel when it's a matter of minutes to get them in some cases.
