The response time is so low that 120fps will still look like 30fps. It will feel better, for sure, but it looks like shit.
Try Mina the Hollower demo, it has a 120fps mode. There is zero difference between 60 and 120 on the switch 2 since it only has enough speed to show 30fps correctly

B: you havent played a side scroller yet. Low response times are best shown in side scrollers. Movement into the screen shows less blur, thats why most people, who started with mkw dont notice it.

No console will ever be the "best way" to play anything. Consoles are fleeting. You'll lose access to your games eventually, or they'll start having relatively low resolution and frame rate, unlike PC where games will play at whatever resolution and refresh rate you have at the time.
