I would argue that your arguments seem to suggest you don't like video games themselves actually for what makes video games, video games, which is fine but i'd suggest an alternative, such as text driven AI RPG's/Roleplay, it prob has a lot more of what you're looking for, unless of course this isn't actually what you're looking for, and this has to do far more with an emotional bias, which is probably far more in line with reality isn't it?

Generic? There hasn't been a single studio, indie or AAA that has ever even gotten close to making a game similar to Fallout 3/4, or Skyrim for that matter, i'm serious, avowed was a total failure, Outer Worlds while yes supposedly trying to copy New Vegas, which yes i'm aware was made by obsidian, didn't even get close.
I would love if these games had more RPG mechanics, of course I would, that would objectively make the games better, but you know what would fundamentally make all the games maybe 10x worse? Removing the gunplay/combat, ease of modability, changing it to turn based, removing the majority of the locations/side content, making it third person focused, removing interactability with the worlds objects such as the physics systems or even making homes/building in some of the newer games.
Sure tons of games have better versions of all those features, but i'll tell you what no game has, all those features combined into one game, anywhere close to BGS quality, so yeah no shit if I could press a button and add infinite dialogue options and branching stories, or even add a text prompt to every character you speak, that'd be cool don't get me wrong, but i'd much rather press the add 1000x new enemy types/more reactive enemies, quests, locations, bigger world, and more ways to tackle combat, stealth, etc button with minimal story choices, both are great though.
