Ultra Instinct is called 身勝手の極意, the mastery/control/perfection/secrets/arts (極意 gokui) of the selfishness (身勝手 migatte), but there's a pun here since the japanese term for selfishness is written with the characters for "a body moving on its own". Thus, it plays with how angels can't side with mortals and help (have to be selfish and worry only about their divine stuff) and how the technique makes your body move by itself.
Basically, there's NO mention of instinct, they just adapted 極意 as "ultra" and 身勝手 as "instinct". That's why both Beerus and Vegeta mention their destroying instincts but it doesn't reference UI whatsoever, Vegeta instead comes up with the namen 我儘の極意, which means roughly the same but using a different word for selfishness (我儘 wagamama), one that doesn't convey the movement of the body and is instead more on the line of a "bad" selfishness, an egoistical one, a parallel to Goku's UI. Similar, but different, a different type of selfishness, hence the "ego" of the western name.
Toyotaro, who came up with UE, also defines the difference between UI and UE as "your body moving exactly how it wants" and "you moving your body exactly how you want". Two different takes of selfishness. One is devoid of thoughts and based on your body, the other is focused on its desires and based on your mind.
