Basically, it probably depends a bit on the exact model of external drive you have but most external drives just have normal internal drives inside with a small controller board that powers them and converts sata to usb.
They're fundamentally no different, you are just paying extra for a plastic case with a converter inside.
So if you have a dead external sitting around you can just pry it open, pull out the board and use it with a different internal drive.
Like I said though some of them have maximum sizes they support so if you switch to a much larger drive it may not be able to format it to use all the space. I probably wouldn't mess with taking apart a working external but if you have one that is already dead it is worth salvaging and trying to reuse.
