I mean it looks cool. Honestly, what more do you really need. A lot of the time, guns are just chosen entirely for their looks. The SOCOM was chosen for MGS1 purely because it had a cool aesthetic and looked good even with the PS1's boxy-ass graphics.

On the other hand, the M1911 is usually chosen for its history and reputation for its reliability. It's dated, but it's a good gun isn't too flashy or extravagant. It has a "modest, simple, yet effective" feel to it, hence why I think it's so often chosen as a basic/starter pistol in so many games. It's a bit like how protagonists in a lot of games don't tend to be the flashiest-looking characters compared to the main antagonists. There's a bit of an underdog feel to them and the M1911 is good for reflecting that. Not a bad gun, but not and overblown one either.

It would work to fire the round probably, but the bulk of the propulsion of bullets only happens because of the barrel of the gun constraining the gas from the ignition of the gunpowder so it continues to act on the bullet for the whole time it takes to travel through the barrel. As long as the bullet can go forward there shouldn't be high risk of the brass exploding. It's when the bullet is blocked by an obstruction and can't exit the barrel that you get explosive malfunctions like that. By the look of it in the animation the bullet should have enough horizontal clearance to get out of the barrel, so an explosive malfunction is unlikely (but it's funnier this way)
