Graphical fidelity might not be as high but this was a game you played with 2gb of RAM and 512mb of VRAM.
Compare it to Pic related in Unreal 5 with systems multiple times more powerful and your seeing diminishing returns.
Plus the art style, effects and physics in Crysis are still top tier.

Nvidia had a lower market share then. Studios didn't actively seek them out for tech.
It wasn't until around late 2010s that NVIDIA now reaches out to every big devs to fix their render pipeline for them as well as help them integrate stuff like DLSS for their games. AMD tried to do it but they do not have the same budget and can't afford it really.

I guess it's the shift in the industry. Then almost everything was tailor made for your game while now you can buy an asset with half dozen textures for normals, albedo, roughness, reflections etc and slap that in your game.
Also temporal anti aliasing solutions have issues with very thin pixels and might delete them from a scene. If you ever played a modern unreal game with rain you might know what I'm talking about.

Honestly, betting that most AAA devs, especially the bigger ones, are being pushed/encouraged/incentivized by software/hardware companies to push newer rendering technologies as much as they possibly could.
It could also be that the pipelines for new rendering tech doesn't play nicely with a lot of older techniques, and that some cases (like optional raytracing) would add a lot of additional work.

Also, the scale of AAA games have increased dramatically, and many devs no longer have the EXTRA time or budget to experiment with "lost tech". It's a sad state of affairs.

Believe it or not it worked fine in DD2, aside from an issue with their npc coding. I don't know what they did to fuck it up in MH6 but it's impressively bad.
