Because it was the last genuine 2D game in the series released on a home console. Every subsequent game was stuck on a gimped handheld with shittier hardware.

Its sources of inspiration were kinos like Coppola's Dracula and Vampire Hunter 1985 while the later games had lesser influences.

What's odd is that it never gets mentioned in threads about "vampire games." Into that category people will put Blood Omen, the two VTM games, Vampyr, Bloodrayne, and maybe even Soul Reaver, but old Symphony of the Night is excluded. The most likely reason for this is that Alucard is muh noble vampire archetype, a good guy, and with him there's no drinking from human innocents, trafficking with demons, or any other supervillainous acts. You don't get to play out that particular power fantasy. Even so, Alucard is an authentic vampire who can shapeshift into mist, a bat, or a wolf, and SotN should be acknowledged as one of the best vampire games. It's certainly the most polished – the others are janky as fuck.

Because SotN is first and foremost is Hagihara, not his assistant Igarashi.
Of Igarashi's games only HoD is atmospheric enough to somewhat resemble SotN, but even HoD is somewhat weaker (and, iirc, not exactly made by Igarashi either).
Igarashi's games aren't bad, they are good in their own way - but they are way too modern, bright and even lighthearted. Too many gimmicks, not enough dark and mysterious castles. Original Devil May Cry is more Castlevania than Aria-Dawn-Portraits-Bloodstained.

SOTN unironically insists upon itself and I don't think your a real Castlevania fan if that's the only game you like in the series. Far too many skip the handheld games because "its not SOTN" unable to wrap their head around a new experience. I'm not saying SOTN is a bad game but people put it on a pedestal almost over hyping it as the end all be all.
