To my recollection there's nothing that overtly ties Gwyn to the Undead Curse (which is more laid as a side-effect or symptom of the First Flame beginning to die), but level design and the overall setting, with details like how many intersecting circles and positively enormous castle walls all the human settlements in Lordran like the Undead Burg have, make it apparent Gwyn DOES NOT and never did like humans and was doing his absolute damndest to keep them under lock and control. It's also incredibly suspicious how only humans are affected by the Undead Curse, meaning something is going on with humans that isn't going on with any other life offspring of the other three Lords. Gwyn's gods, Chaos demons, and Nito's undead aren't affected by the curse at all, even if all three are also taking advantage of the situation by leading Undead around, or stuff like Pinwheel sipping off of Nito's power while he's in his coffin to let the Undead Curse blow over outside.

The Darksign and the Undead curse are separate things. The Darksign contains the dark that spills out of humanity and lets human live as humans. This is why Gwyn created it, because he feared the Dark (rightfully from everything we have seen).
It is not a curse from his perspective. People get to live normal lives and abominations aren't running around eating everyone.

So the ideal estus is the one Oscar gives you. This is a "perfect" estus flask.
These don't exist anymore by DS2 or 3.
The flask isn't so much the limiting factor as much as the bonfire itself in terms of charges. Less kindled bonfires simply don't generate the same amount of heat.
The fire keeper souls "insulate" the flask. Not really against heat loss, because this isn't "real" heat, but against the loss of "soul" associated with the flame. Fire keepers themselves tend the bonfires, so their souls stabilize the essence carried within.

The estus shards of DS2 & 3 are literally repairing the estus to hold more, and return to the more intact estus of prior eras. The flame can no longer be kindled the same way, there's just not juice for it.
Undead bone shards/dust/whatever are bits of prior undead that linked the flame. Their souls are thus intrinsically tied to the bonfire, and makes the flask more "like" a bonfire. This achieves the same result of stabilization of the essence inside.
Ashen Estus is something else, and also provides insight into how Estus works, because Ashen Estus is explicitly stated to turn the heat of a bonfire cold.
As Ashen Ones are, on a fundamental level, different from the undead of DS1 & DS2, their Humanity has been stripped in a way "normal" undead aren't. Ashen Estus is, instead of refilling the essence of soul Estus normally does, refilling the "void", the "hollow-essence" that existed in primordial humanity, before the soul was thrust onto them.

Undeath and the Darksign are similar, but independent.
The Darksign can be thought of as a parasite. It's not quite this, but, it's a good metaphor. It's a "bank" of soul, that fills over a human's life. When a human dies, this bank is emptied, and used to feed the flame, and preserve ages. This both feeds the flame, and deals with the fundamental fear of the Dark Soul Gwyn faced. That is, unlike the other three souls, the Dark Soul doesn't weaken when it splits.

When Gwyn splits off a part of his soul, it is gone forever. Gwyn is weaker forever, by creating each one of his Black Knights, because those are literally pieces of his being. Gwyn has forever lost abilities by creating Gwynevere, because Gwynevere has them now. He may or may not be able to suck these back up, but as it stands, that's how it works.
When the Pygmy splits of a piece of soul, he isn't weaker for it the same way, and the Dark Soul shards can grow. The Ringed Knights were the embodiment of these; they individually grew in power MASSIVELY over the war against the dragons. The Darksign combats this, the "growth" that shards of Dark Soul would otherwise experience are siphoned off and drained, preventing the runaway, exponential growth of the Dark Soul that Gwyn feared.

Undeath, and hollows are just what soulless "beings" are in the Dark Souls universe. Indistinct beings without one of the great souls' touch.
The Darksign indirectly creates undead, because a human with all their soul siphoned off becomes one. The deal with Nito, and the curse of undeath, was simply making humans cycle, to tap the Dark Soul's capacity for infinite growth, for infinite fuel for the flame. Unfortunately it didn't work quite as well as Gwyn had hoped. You can't just keep putting a spoonfull of kerosene on a fire to keep it going, you need big pieces of wood periodically. And that's what linking the fire is. A large mass of Soul, thrown into the fire, so it has something to burn over time.

I don't think it ever burned the body. That is not the problem. Humans don't have special bodies.
Nothing dead in Dark Souls is actually "dead". The light is just too weak to make it move anymore at a certain point. That is why the still bodies in DKSII are buried where no light is allowed so that they won't wake up.
If it completely incinerated bodies, eventually the ash would return, as shown in 3.
The problem is that the age is turning and the light of the First Flame is fading. If it was just a matter of getting rid of humans, then Gwyn was a saint for not doing that, but he definitely wasn't saint. Although a lot of the fans exaggerate how bad he is.

Gwyn is a case of someone with incomplete information making the best decision he could think of at the time.
The exponential growth of Dark actually WAS a looming problem, and all Gwyn had ever known was the period before the First Flame, which fucking sucked, and the period after, which was relatively nice.
The layer of antagonism towards Humanity wasn't really out of malice, it was raw best-result utilitarianism, informed by "no fire bad", and "runaway dark bad". His best examples of runaway Dark was Ringed Knights, and Manus, niether of which exactly paint a good picture of what happens when Dark is left to grow.
Gwyn had no way of knowing the long term consequences of the cycle of kindling, and undeath when he did what he did.
Aldia's criticism is correct, but comes with the benefit of hindsight that wouldn't have been possible if it hadn't been done, and the better solutions took longer to come up with than Gwyn had.

Gwyn's mistakes are overwhelmingly understandable, it's not like he set out from the beginning to shit everything up. He was just the only person in a position to make a call, with pretty limited information and bad examples of alternatives, with limited levers to actually pull.

He ultimately chose to burn himself before anyone else to try to extend the fire, which shows his character. It's a bit ambiguous exactly whose brain child it is, but the idea of letting an undead amass enough soul to actually be a log definitely came from somewhere. Gwyndolin is the obvious route, but there's the bigger question above that if it's Velka. Velka's connections to everything are all pretty hazy, besides her having a finger in nearly every pie in DS1. I forget where I heard it, but I saw a pretty compelling argument, that Velka is responsible for Kathe and Frampt, and creating the cycle of kindling vs non-kindling, that I can't recall in enough detail to present well.
There's also the open question of Nito, and the larger issues of the stories of these games getting scrambled later in development. Nito had incredibly important plot points cut in both DS2 and DS3, and is more than anyone else, at the heart of what ultimately leads to the Chosen Undead, and cycle of kindling. Nito is the only one of the four with pieces still actively on the board in 2, in the Melphanito and the Grave Wardens, which are actively playing parts in Vendrick's movements. What their actual goals were is what we lost, and then whatever Nito's lingering role in DS3 was, was scrapped and his only footnote is "Aldrich probably ate him". We'll never really know what Nito's endgame was, which is unfortunate, because there's a pretty clear current of intent of action flowing from DS1, to the scraps of DS2.

I think there's a counterpoint that Dark is at its most dangerous when it's purposefully agitated (see Manus being pissed off on purpose) and that if Gwyn had ever actually allied with it instead of trying to dominate it he'd have had no real cause for paranoia, the Furtive Pygmy and all related soldiers and offspring were perfectly content to ally with Gwyn and even hold him in reverence but he just could not help himself from being domineering; this is after all a god who loathes dragons so much he decorates Anor Londo with taxidermies of drakes and dragons and banished the Nameless King for allying with them, but also had some nasty dragon sex at at least one point to fire off Yorshka and possibly Priscilla also

I'd also point that Anor Londo is so blocked off that the only way into it is by being flown in by demons at the time of Dark Souls 1, up to and including a direct road into it from Sen's Fortress just past the iron golem has been purposefully blocked off, and Sen's Fortress is probably a training ground for Silver Knights. Gwyn apparently did NOT want anybody in Anor Londo after he left to link the fire, probably because per the game's topographical map Anor Londo is built directly on top of the Kiln of the First Flame and he didn't want anybody realizing he'd peaced out, let alone to artificially extend the age of his supremacy. There is apparently an Age of Dark after Gwyn's Age of Light no matter what, and I think even with the most charitable read of Gwyn's character that he didn't like Dark as his opposing element whatsoever, so much so that he wasn't capable of getting along with Dark even while commanding abyssal helpers, ended up making it an enormously bigger problem by being two-faced about it, and ultimately threw himself into metaphysical fire just to kick the can down the road against his polar opposite "winning the long game"

Time and ages have shown the correct ways to deal with Dark. Alsana and the Ivory King is the best example, as the shard of Manus who was rehabilitated from her fixation.
Gael actually provides another glimpse, since with just about all of the Dark Soul contained within, (besides whatever the player has), he immediately stabilizes (and hollows) the moment he achieves hope for the future, in the form of the new painted world. Hollows are the true form of humanity, after all. In the since that, agitated dark and Humanity is defined almost exclusively by seeking something; want, jealousy, fear, and hollowing is what happens when that "purpose", that drive to seek, is removed. The difference being hollowing due to despair, and hollowing due to contentment. The way to deal with the Dark is comfort and consolation. This is the form of hollow you ideally create by completing people's questlines, and why those hollows stop appearing. Why Gael finally stops getting up when YOU kill him, after a nigh eternity of dying and getting up again.

Velka is kind of a shrug.
She's TOO vaguely referenced. It's obvious she's important, but there's too little to go on, and "Velka did it" doesn't have enough cases where you can definitely say it's false, to really have value for being true.
Gwyndolin makes a bit more sense, in a vague, poorly informed hope that by getting an undead to do all this, somehow it would free his dad, like linking the flame is something that can be swapped out, not just endlessly renewed. Whether this is an idea fed to him from somewhere, or just open ended desperation is unclear. If there's anywhere Velka would fit in sensibly, it would be the source of information that this isn't just getting a new log, but will somehow get Gwyn free.

Most of it's baseless, but I HAVE heard theories that Havel may have actually been a dragon outright, since this makes the Havel Knights make a bit more sense. But, then that raises a fuckton of problems, including the elephant in the room of the people who locked Havel in the tower somehow mistook a dude in armor for a dragon.

It's want. The curse of want, is what the Dark Soul is.
There was an entire game about this.
The souls form two sets of pairs.
Life and Death is straightforward, Light and Dark not so much. Light is the illusion of the stasis of life, Dark is the change that says it will pass. Light is you laying back and saying "this will never change", Dark is hard at work, changing things around you until you are shocked to realize the world isn't as you recognize it.
Dark is that thing in humans that compels us to change things. Want. The want for food, for light, for comfort, for companionship. Sometimes for something specific, sometimes for just the idea that what's over there might be better than what's over here.
When it spirals out of control, Dark is jealousy. Envy. Hatred and vengeance. When it stagnates, it forms a grudge, and malice.
When the Dark Soul stops wanting, it fades. That's hollowing. No more drive to change, just existing in your setting. Hollowing can occur due to despair, or loss of hope, or satisfaction of that want. But true satisfaction, can almost never come from having wants met. Only achieved and earned. Nobody wants to just "win". They want a final battle, after which their purpose is fulfilled, and they can rest forever. Because that's part of want.
And that's Dark Souls.

It's especially noteworthy that it's just Gwyn that had these neuroses and hang-ups, Nito and the Witch of Izalith were completely cool with eachother and had no known rivalry or oppositional nature as heirs to Death and Life the way that Gwyn obsessed over the Abyss and Dark as the Lord of Light

I should have mentioned this when I stated the Life and Death souls are an opposing pair.
The forces they exert are opposing, but Nito and Izalith themselves didn't have any beef, and what handful of interactions they had were vaguely cooperative, in the sense that both were largely happy with the current state of things, and were willing to help keep things good.
Hell, Izalith's intent to completely sidestep the problem of the fire needing fuel could be considered incredibly cooperative with everyone, it just exploded instead. They're equal parts of homeostasis, if anything, not the control obsession of Gwyn, or the endless desire for things of Dark.

The curse of undeath is cased by a seal of fire on the dark souls of men.
Undead are basically indistinguishable from primeval fire and this is evident in how bonfires burn solely from the bones of the cursed.

Estus heals undead because estus is basically just captured flame from the bonfires.

Incidentally, this is also why holding humanity doesn't actually reverse hollowing, but burning it in bonfires does.
People misinterpret it as "The dark is hollowing you" but its really the fact that throwing humanity into the fire restores you, the fire-hybrid entity, to a more human state.
