If 5v5 you just have to stand around mid until someone is in a bad spot then blow them up. If that doesn't happen you stay alive and wait for either your DPS to carry or for one of their DPS to get killed for diving your supports. Then you just hold W.
If 6v6 you can always swap D.Va, Wrecking Ball, or Winston and play more of a flanker/pressure role instead of frontlining. That distracts the DPS and forces picks.

And I'd say I win maybe 50% of games I backfill as support about close to 3 quarters as tank. its one of the weirdest things Ive noticed about overwatch, I should probably start tracking it

Add on top that it's an underwhelming season for cosmetics, the whales are probably playing something else.
