S-video on a CRT is superior to both composite and component. Composite is too blurry, and component is too clean and winds up looking worse than composite on most games. S-video meanwhile reigns supreme happily in the middle, clear but not TOO clear.

That pic isn't accurate. You are using a console that isn't even designed for RGB. S-video is just a useless middle ground. There's no reason to use anything other than composite and RGB

S video fixes dot crawl which is the major problem most people have with composite. These days s-video is probably harder to find that component, some system its easier to get component if you convert from rgb. For me I have a pc engine cd that doesn't really work with rgb but could probably be modded for s-video.
I did a small comparison and found the main difference being white text on a black background was easier to read in rgb.

I love my N64 S-Video Monster Cable that I bought for $65. It's such a nice freaking cable, with the extra long length, the thick insulation and the super shiny gold contacts. It improved the image on my 27" Trinitron so much and I'm so happy with it. Fantastic purchase.
