The original story didn't have the love triangle between Arthur, Lancelot and Guinevere and Mordred also wasn't Arthur's son. Mordred's rebellion is fueled in part by a lust for Guinevere, who rebukes him when he attempts to seduce her in his plot to overthrow Arthur. This inspired later French retellings where she actually did fuck him and spawn a bastard, creating a succession crisis that led to rebellion, which then eventually evolved into the version we know today. There was an almost 700 year gap between that first depiction and the second and third btw.

Anon already sort of mentioned this but basically she was one of the characters actually from the original "complete" mythos introduced in the 12th century. There were some one off stories penned between the 8th and 11th centuries that featured Arthur as a character, but the actual story and setting we understand of the Arthurian mythos was established by Geoffrey of Monmouth. Guinevere actually was an invention of the French several hundred years later, as Geoffrey originally named the character Gwenhwyvar (Guanhumara). In this version of the story, Arthur leaves for a campaign against Rome to fight his rival, Lucius Tiberius, and expel them from the land. Mordred takes her hostage when he assumes the throne in Arthur's absence and Arthur rescues her by killing Mordred and reclaiming Camelot as a liberator after returning from Rome.
This story was then altered significantly by Robert Wace, a norm raised and educated in France, who published a chronicle of Geoffrey's work with his own alterations for French readers. In this version of the story Guinevere knowingly betrays Arthur when he leaves, having been plotting against him the entire time. She seduces Mordred, making him the new king and bearing his children, and both are deposed on Arthur's return and victory. Wace's version was then reiterated by numerous other French authors over the years which eventually was compiled and edited by Malory in Le Morte D'Arthur which took many of those elements and "refined" them for example by making the traitoress Morgan instead of Guinevere. This is also why in that version, Morgan - previously "just" Arthur's sister - was also his lover at one point. Anyway he also made a lot of other changes, and Arthur being double-killed with Mordred was also an invention of Mallory, hence the name of his compilation ("The Death of Arthur").
