there's a cool pasta sauce you can make by frying/simmering onions, garlic, tomatoes, bell peppers and I guess whatever other kind of vegetable that can cook until very soft - you just have to then mix the cooked vegetables into a sort of paste.

Honestly, I kind of wing it but, I will freeze all bones I get (regardless of animal) but the chicken bones work by themselves as well. bring a stockpot to a rolling boil, add the bones in, and boil for at least like 4 hours (longer the better). Remove the bones and then add in onion, garlic (not that chink shit), black pepper, basil (fresh or dried). Bring it back to a boil and add in meat or noodles (whatever you prefer).

Also, pickling vegetables is your friend, go to a dollar store and get sealing mason jars, get pickling salt, (white or pickling) vinigger and water. Don't seal them all the way, wait 10 days and bam.

the traditional method is just melting butter into it and salt of course.

my personal trick is mixing some sour cream into it, and then searing that over high heat a for couple of minutes til the sour cream starts to brown a tiny bit.

i also like to undercook my buckwheat a bit, so it's al-dente. the traditional eastern euro preparation usually ends up with a very soggy product.

it's the best under some jus or meat gravy,

My cakes are simple and made in loafpans, but I've never met anybody who didn't love them.

Pic related is some MΓ€mmi cake I baked, due to the lack of fermented rye flour availability in the US and so I adapted the pudding into a cake and ate it with fresh berries, whipped cream, and ice cream because I'm a goddamn American! Finnish food doesn't look like much, but it's delicious and always hits the spot.

It was a compliment, so no "i guess"ing! Anyways I really should learn to bake cakes in different shapes and sizes, but basic loaf pan cakes are a great way to finish off the odds and ends of the dessert ingredients in the kitchen since the shape of the cake is going to be fixed.

I took no pictures, but I just got back from visiting family and decided to melt some chocolate Easter bunnies, mixed two mashed bananas into each loaf, and then added semi-sweet chocolate chips to each one. Rather decadent, but it was chocolatey and tasty.

I'm taking a break from baking because my belt feels too tight.

To make traditional MΓ€mmi, you need fermented rye flour I think to thicken the dish into a pasty pudding texture. I tried making it without it and it came to have the texture of a good chocolate syrup, so I poured it out on vanilla ice cream and the flavor was still wonderful even if the texture wasn't right.

I'm not an expert, but I think that was the problem.

Fermentation is super simple, you can probably just make it from rye flour at home; doesn't parse much different than a sourdough starter
