I have, however, a question: given the taller coffee bed, to achieve the same flow it should be needed to grind coarser than V60 but it wasn't the case because the flow is always fast.
I usually grind around 80 clicks on my kingrinder K6 and in the video I was a 70 clicks, so finer, but even when pouring in 3 phases after the 45 seconds bloom the coffee is ready in under 2 minutes.

How long should I rest this? Normally S&W caps for a 2-3 week rest, but I know decaf needs less time.

Anything with a recent roast date is a good bet. Trader Joe's I've heard has some decent single origins if you can find something fresh enough. Even Aldi, if fresh, could be good.
Since you have a BJ's membership, go through the aisle and look at the dates on each bag. Buy whatever is freshest and don't be afraid to go to the back of the shelf for the newest beans.

if youre really curious the only tangible benefit to your brew from a different material is that glass has rather poor temperature retention; it will bleed heat more quickly than thicker materials and the brew will cool faster. this will affect how the brew extracts, but for most people and most coffees the difference will be negligible.
other than that, some folks like to avoid plastic, and some folks like a more durable vessel.

Had some train station coffee from this cheap ass bakery thing out of desperation today and it was actually quite decent. Balanced, not bitter, even a bit of fruit. It not technically hitting 9 bar is probably just the location of where he modded in the profiler.

Its not like a lever or something else with pressure control where you could back off a bit when that pressure hits a "wall". Your only control is turning down the heat or pulling it off the flame.

my usual local roaster had some new beenz that were labeled as being from a "micro-lot" rather from one of their usual single-origin sources. didn't notice it was like a full $8 more than their other single origins till i went up to pay. these beans better be fuckin good.
