The Pit Boss ones are fine, I have had one for 3 years and it's been a workhorse. I don't see spending the extra money on a Trager, my brother has one and I see no difference in the finished product. The only thing I will say is stay away from the ultra cheap pellets. You don't have to buy the super expensive $24 a bag pellets but don't fuck with the ultra cheap $5.99 shit either.

Get the idea of it being a smoker out of your head. It's an outdoor oven and honestly they are the worst in every single category. If you want simple and some 'smoke' they are fine. But if you want real smoked food get a real smoker.

Does anyone who uses an offset have any pointers for managing the fire in a cheap one?
I see all these youtube channels where they just start a fire in the box, open all the dampers and add a set amount of every 20 minutes to keep it going. Keeping things flaming in mine is fucking impossible, though, and I have to constantly check on it, stoke it, and waste a ton of wood just getting those last 10 degrees on a set of chicken thighs. Everyone I know IRL apparently just throws a fat fucking log on a bed of coals and closes the dampers to get it smoldering, but all of these cooking websites say that acrid smoke makes your barbecue garbage.

What do I do when I got mostly small pieces of coal (not Briquettes) to work with? I'm using a classic weber kettle and when I prep two hot chimney lighters full of it the one with larger pieces gets significantly hotter on the grill. Both are sufficiently ignited with mostly white ash over em. I'm also using coal baskets, pic related, to control the heat zones better. If I didn't use them I think a lot of coal would just dump straight into the ash catcher.
Currently it's struggling to even reach ~500f/250c

Do I just throw that shit out and buy proper big chunky coal or is there a way?
