I love the hot dogs/sausage they use in greece for a "sausage roll". It has a very distinct taste that I've never come across anywhere else. I really like it. I always pair it with a cold chocolate milk - it's absolute kino.

That sounds like loukanikopita,you can find that in most furnaces or places that make coffee,am personally not a fan,these days I have a few selected shops that I eat and a few selected that I drink coffee from.
Supermarkets like masoutis actually have good meals in packets (pic related) and in cases you can get better coffee in a sklavenitis market rather than the local Mikel,grigoris,coffee island,il toto and Don't make the mistake that more money means bigger and tastier portion especially if you don't have Greek friends around

My other favorite thing is bougatsa me tiri - I've heard thats more of a Thessaloniki/Northen Greece thing because in other places they call bougatsa the one with semolina custard.

When they are cold it's harder for them to break - but yeah you have to be gentle, I always break a couple but it doesn't affect the final product.

I guess perhaps the semolina flour sort of impacts the browning of the final product? Maybe gets in the way of the process that occurs for it to brown in the first place? Just making a wild guess.

Yea, that's exactly what I'm trying to say. I think the semolina flour is what prevents it from properly browning. So, it'd probably be a good idea to brush oil on the top before baking since the semolina might just end up reabsorbing the fat from the dough before it can properly cause the reaction to turn it brown?
